Ingredients

Patties
16 oz shredded cheddar cheese
4 oz pimentos
1/2 cup mayo
1 3/4 pounds ground beef
vegetable oil, for brushing on the grill rack
12 slices of pumpernickel
6 romaine lettuce leaves
6 (1/4inch thick)slices of tomato
6 thin slices of onion

 

Instructions

Preheat grill to medium-high. To make the patties, combine the cheese, pimentos, and mayo in a large bowl. Divide the mixture evenly and shape into 6 balls. Shape the beef into 12 thin patties. Place 1 cheese ball in the center of each of 6 patties and top each with a second patty. Make sure to completely enclose the cheese. Whe the grill is ready, brush with oil. Place patties on rack, cover, and cook, turning once, until done to liking (5 to 7 minutes on each side for medium). To assemble the burgers, place a leaf of lettuce, a patty, tomato slice, and onion slice, on each of 6 of the slices of bread. Add the remaining slices of toast on top and serve.
