POBLANO TOCINO QUESO BURGER – MEXICAN
Ingredients
Ingredients:
1. 2 ½ lb of ground beef (50% chuck 50% sirloin) 15 – 20% fat 2. 2 garlic cloves, minced
3. ½ tsp red pepper flake
4. ½ tsp ground cumin
5. ½ tsp dried Mexican oregano
6. ¼ tsp of ground allspice
7. 3-4 tbsp of Mexican beer (depending on consistency of meat)
8. 1 tbsp olive oil
Topping
9. 6 pieces approx 3 1/4â€Â X 3 1/4â€Â Mexican Queso Menonita cheese
10. 6-12 pieces (depending on size of bacon available) bacon, (grilled crisp while meat is resting)
11. 6 Roasted poblano green chilies, seeded, peeled and whole (roasted, seeded, peeled while meat is resting)
Bun
12. 6 Bakery Kaiser roll, fresh baked, sliced and toasted on grill (toasted while meat is resting)
Homemade Condiment
– Cilantro Avocado – mixed all ingredients smooth while meat is resting, cover and left at room temperature
13. 2 large avocados – seeded, peeled and mashed
14. 1/2 cup sour cream
15. 1 handful of cilantro
16. 1/2 medium onion, grated

Instructions
Hamburger cooking directions: Hand-mix all hamburger ingredients (this can take up to 30 minutes). and let meat rest for one hour. During last 35 minutes of meat resting period pre-heat grill, approx 15 minutes, then grill bacon crisp, toast meat side of bun, watch buns closely for burning, and set buns and bacon aside. Separate into 6 equal portions and mold each portion into a firm patty, approx ½ to ¾ inch thick. Grill hamburger on high heat to sear and crisp outside, then move to medium heat and cook to each individual preference. My preference is medium well, approx. 4-5 minutes per side on medium, with lid closed. Last 30 seconds put on two pieces cooked, crisp bacon and one piece of cheese on each hamburger, and close lid. Spread lightly cilantro avocado condiment on bottom and top of bun, place hamburger cheese side up on bottom of bun, put sliced poblano chili on top of hamburger and place top bun on hamburger and enjoy. Estimated preparation time: Preparation and mixing of hamburger – 30 + – minutes Meat resting – 1 hour (cook bacon, roast chili and make cilantro avocado during this time) Grill pre-heat – 15 minutes Grilling – approx 15 minutes Hamburger build – 5 minutes Total time estimate – 2 hours
