Provence Surprise

Ingredients

Carmelized Onions:

2 Vidalia Onions
2 TBS Sutter Home Merlot wine
4 TBS unsalted Butter
2 TBS Brown Sugar

Filling:

The Carmelized onions from above
6 Anchovies fillets – minced
6 Green Olives – cut into slivers
6 Black Olives – cut into slivers
4 tsp Herbs de Provence
4 TBS unsalted Butter

Burgers:

2 ½ lbs ground chuck
3 tsp Herbs de Provence
1 1/2 tsp liquid smoke
4 TBS Sutter Home Merlot wine
1 tsp allspice
1 tsp pepper

Colavita Olive Oil for brushing of the grill racks
6 Kaiser rolls from the bakery, sliced in half horizontally
6 TBS of Fire Roasted Tomatoes – from an 8 oz can

 

Instructions

Step by Step Instructions –

Carmelized Onions:

Start the grill and preheat (15 mins) to a temperature of 450 degrees

Preheat the saute pan, add in the 4 TBS of unsalted butter.
Slice 2 Vidalia onions aprox ¼” thick, then add to the saute pan on the grill.
Stir to coat with melted butter. Next add 2 TBS Sutton Home Merlot wine and continue to saute until carmelized. Aprox. 45 mins. Remove when done and set aside to cool.

Turn off he grill for now.

Filling:

In a smal bowl:
Add the Carmelized onions from above, mince the 6 Anchovy fillets & then add to bowl, then chop the 6 Green & 6 Block olives into slivers & add to the bowl. Add the 4 tsp Herbs de Provence, 4 TBS unsalted Butter. Mix all ingredients well, separate into 6 portions and refrigerate until building the burgers.

Burgers:

In a large bowl place the 2 ½ lbs ground chuck, 3 tsp Herbs de Provence,1 1/2 tsp liquid smoke,4 TBS Sutter Home Merlot wine, 1 tsp allspice, 1 tsp pepper.

Mix all ingredients well. Separate the mixture into 12 equal parts and form into patties.

Take 1 patty and place 1 – 6th of the filling in the middle and top with a second patty and seal the edges to form a stuffed patty. Place on tray and continue building the 5 other stuffed patties.

Grease the grill racks with the Colavita Olive Oil.

Start the grill and preheat (15 mins) to a temperature of 450 degrees.

Place burgers onto the grill and close the lid, let cook 5 to 6 mins. Turn the burgers to create grill marks & cover, cook another 4 to 5 mins. Flip burgers, cover and cook 4 to 5 mins. Turn burgers to create grill marks, cover & cook another 4 to 5 mins.

During the entire time you are cooking the burgers, you are trying to maintain a grill temperature of 400 to 450 degrees.

To plate:

Slice the Kaiser rolls horizontally, keeping tops with their partners.

Place the bottom of the Kaiser roll on the plate, spread each bottom with 1 ½ TBS. of Fire Roasted Tomatoes. Top with the burger and then place the Kaiser lid on top and serve.
