Pinot Noir

This burger takes a traditional American ingredient, beef, and introduces new internationally inspired flavors to reflect the changing nature of America.

Ingredients:

1 cup of Sutter Home merlot wine
1 pound ground beef
1 tsp fennel seed
1 tsp ground cumin
1/2 tsp ground cardamom
1/4 tsp salt
1/2 cup vegetable oil
6 slices of whole grain white bread
6 leaves of green leaf lettuce

Instructions:

Preheat grill to medium heat. Add the wine to a medium non-stick pan. Reduce the wine to approximately 25% its original volume, about twenty to thirty minutes. Pour wine reduction to a large mixing bowl, and allow to cool for about five to ten minutes.

Add the beef, fennel, cumin, cardamom, and salt to the bowl with the wine. Fold the ingredients together until well mixed. Form into six equal patties, approximately 1/2 inch thick.

Brush the grill liberally with the vegetable oil. Place the patties on the grill, and cook on each side for five to seven minutes until desired cooking level is achieved. Set the finished patties aside on paper towels.

Place the bread on the grill until they achieve a golden brown color on one side. Remove the bread.

To assemble the burgers, place each patty with a leaf of lettuce between two slices of bread, with the un-toasted sides of the bread facing out.
