Rainbow Grilled Peppers and Sausage Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.


3 medium bell peppers-1 red,1 orange or yellow,1 green
2 1/2 lb.ground pork
2 1/4 t.salt
1 1/2 t.paprika
1 1/4 t.cayenne pepper
1 1/2 t.ground fennel
6 ciabatta style rolls,brushed with garlic olive oil
6 slices provolone cheese
1 bunch arugula
ketchup and whole grain mustard,if desired


1.Grill peppers over direct medium heat,until charred,turning every few minutes.Remove to paper bag to steam for 10-15 minutes.Remove skin and seeds,cut into strips and set aside.
2.In bowl combine pork through fennel,adding 1/3 cup water.Form into 6 patties.Grill over medium heat 10 minutes,turning after 5.During last minute,grill rolls and top burger with cheese.
3.To serve,top with grilled peppers,arugula and pass ketchup and mustard,if desired.
