Red Eye Burger with Cream Cheese, Bacon, and Raspberry Chipotle BBQ Sauce

Living in Texas raspberry chipotle dip is a regular dish on the potluck table. The raspberry chipotle bbq sauce is spicy with a sweetness that goes great on a burger. Add in the red eye coffee seasoning takes this burger to a whole new level.

Ingredients:

2 pounds of chuck ground beef (80/20)
1 tablespoon of ground black pepper
1 tablespoon of paprika
½ tablespoon of ground coffee
1 teaspoon of ground mustard
½ teaspoon of ground white pepper
½ teaspoon of salt
¼ tablespoon canola oil
½ cup of onion
½ teaspoon of minced garlic
15 oz can of tomato sauce
½ cup of seedless raspberry jam
¼ cup of Chambord raspberry liqueur
2 teaspoons of lemon juice
¼ tablespoon of apple cider vinegar
¼ cup of sugar
¼ tablespoon of hickory liquid smoke
¼ teaspoon of dried chipotle pepper – diced
1 cup of fresh raspberries
2 cups of diced butter lettuce
1 package of 8 oz cream cheese cut into 12 slices
¼ cup of diced pickle
¼ cup of diced red onion
3 Campari tomatoes; sliced
12 slices of pepper bacon
6 Kaiser Hamburger Buns

Instructions:

Pre-heat gas grill to 400°F. Make the burger patties: Mix together ground beef, black pepper, paprika, coffee, mustard, white pepper, and salt. Section and form into 1/3 pound burger patties, set aside. Place an gill safe sauce pan on the grill and add the canola oil. Wait 5 minutes to heat the oil then add the onions and sauté for 2 minutes. Next add the garlic, tomato sauce, raspberry jam, raspberry liqueur, lemon juice, vinegar, sugar, liquid smoke, and chipotle pepper. Bring to a boil while stirring frequently. Once at a boil remove from heat. Strain the bbq sauce into a large bowl. Next fold in the fresh raspberries to the bowl. Return to the sauce pan and place back on the grill at indirect heat. Cook the bacon: On the pre-heated grill cook the bacon slices in an oven proof pan until browned. Cook the burger patties: Place the burger patties onto the heated grill. Cook 5 minutes then flip. Cook an additional 5 minute then flip. Top each burger with 2 slices of the cream cheese and cook an additional 2 minutes then remove. Build the burger: Place 2 bacon slices on bottom bun, add lettuce, pickle, tomato, and onion then add the burger patty. Top with 2 tablespoons of bbq mixture, then place the top bun. Slice burger in half and enjoy.
