Reuben’s Twisted Cuban Burger

Ingredients

1 and 1/2 lbs. ground pork
1/2 lb finely chopped cooked corned beef
1 clove garlic, minced
1/2 cup grated sweet onion
1/2 tsp salt
1/4 tsp ground pepper
1 and 1/2 c. prepared coleslaw mix
1/2 c. good quality prepared Russian Dressing
12 slices swiss cheese
12 sandwich sliced pickles
6 good quality hamburger buns. They should not be too soft.
3-4 Tbsp vegetable oil for greasing grill rack
1 large heavy cast iron skillet (large enough to cover 6 burgers
Aluminum foil

 

Instructions

Preheat gas grill to medium high heat. Place heavy cast iron skillet on grill to also preheat.

Prepare patties by combining pork, corned beef, garlic, onion, salt, and pepper. Mix until all ingredients are thoroughly distributed. Form into 6 patties. Cover and set aside.

Combine coleslaw mix with Russian dressing and set aside.

Oil grill rack and place patties on preheated grill. Cook on each side until slightly below desired doneness. Patties will complete cooking on last step. I cook these burgers approximately 4 minutes per side for final result of medium burger. Place 2 slices of Swiss cheese on each patty during the final 2 minutes of cooking. Take burgers off the grill and place each one on a bun.

Top each burger with 2 pickle slices, and approximately 1/4 c. of coleslaw mixture. Place top of bun on burger and wrap entire burger in aluminum foil. Place foil packets back on the grill and place preheated heavy skillet on top of packets. The skillet will press the burgers like a Cuban sandwich. Continue cooking for 2 more minutes. Remove from grill, open packets, and enjoy your pressed burger.
