Roasted Garlic Burger

5 ounces whole garlic
2 tablespoons olive oil
1 medium red onion
10 ounces Merlot wine
3 tablespoons Blackberry Jelly
2 pounds ground chuck
2 teaspoons Southwest Chipotle seasoning
Hamburger Buns
Shredded lettuce



Cut garlic bulbs in half and place cut side up on a sheet of aluminum foil and drizzle 1 tablespoon olive oil over exposed cloves. Salt and pepper to taste. Wrap in foil and place on grill on low to medium heat for about 45 minutes or until cloves slightly brown and of a paste consistancy. Do not allow it to burn. Set aside to cool. Take cooled garlic and squeeze it onto platter or large bowl. Add 2 pounds ground chuck and 2 tsp Southwest Chipotle seasoning. Mix loosely so as not to overwork the chuck. Separate into 4 ounce patties. Two pounds of meat should make 8 patties. Set aside after seasoning to taste with salt. In a medium saute pan heated on grill add 1 tablespoon olive oil and then add thinly sliced medium red onion. Salt to taste and saute until lightly browned. Add Merlot and Blackberry Jelly and place on low heat to gently reduce. Place burgers on hot grill for about 5 minutes before turning to grill for another 4-5 minutes and place in reduced merlot sause briefly. Build burger by starting with Mayonnaise lightly on each bun then the burger on lower half of bun followed by sauted onions, shredded lettuce and top half of bun. Enjoy this savory burger.
