Roasted Garlic Burgers With Andouille And Grilled Green Tomatoes

Ingredients

Roasted Garlic
1 Garlic Bulb
3 Tablespoons Olive Oil Roasted
Garlic Mayo
7-8 Roasted Garlic Cloves
½ Cup Mayo
1 Tablespoon Creole Mustard
Grilled Green Tomatoes
6 Thick Slices of Green Tomato
3 Tablespoons Olive Oil
2 Tablespoons Seasoning Salt
Patties
2 lbs. Ground Chuck
2 Teaspoons Kosher Salt
1 Teaspoon Freshly Ground Black Pepper
6-7 Roasted Garlic Cloves
Vegetable Oil, for the grill
12 Diagonal Slices Andouille Sausage
12 Thin Slices Vidalia Onion
6 Leaves Butter Lettuce
6 Seeded Burger Buns

 

Instructions

Preparations To Prepare the Garlic: Peel as many outer layers of skin off the bulb while still keeping the bulb intact. Cut the first ½ inch off the top of the bulb to expose some of the cloves. Place the bulb on top of an appropriately sized sheet of heavy duty aluminum foil in order to wrap it later. Drizzle the bulb generously with olive oil. Loosely wrap the bulb in the foil to prepare for grilling. To Prepare Roasted Garlic Mayo: In a small mixing bowl, mash the garlic cloves. Add the mayo and mustard. Blend well. Cover and refrigerate. To Prepare Grilled Green Tomatoes: On a platter, lay the tomato slices flat. Brush the olive oil on both sides of the slices of green tomato. Sprinkle generously with the seasoning salt. Set aside. To Prepare the Patties: Put meat, salt, pepper, garlic in a big mixing bowl. Mix the ingredients just until incorporated. Do not over handle the mixture to prevent compacting. Divide the mixture into 6 even portions and form into patties. Cooking Preheat a gas grill to medium high heat. When ready, brush the grill with vegetable oil to prevent sticking. To Cook the Garlic: Place the wrapped garlic bulb onto the preheated grill. Cover. Grill 45 minutes to an hour or until bulb is soft. When done, remove from heat and slightly open foil to allow the bulb to cool. Set aside. To Cook the Tomatoes: On the preheated grill, place slices of tomato. Cook 2-4 minutes or until this side is slightly browned. Turn over and cook other side 2-4 minutes or until this side is also slightly browned. To Cook Patties: Place formed patties onto oiled grilling rack. Cover and allow this side to brown for 5 minutes. Turn patties over once and allow other side to brown for 5- 7 more minutes. This is medium. To Cook Andouille: Place the diagonal slices of sausage on grill. Grill 5-7 minutes or until the edges begin to brown. To Warm Buns: In the last minutes of grilling the patties, place the buns cut side down on the grill until lightly toasted. Remove for the heat immediately and place bottoms on a platter for assembly. To Assemble: Place cooked patty on warmed bottom bun. Place 2 grilled Andouille slices on bun followed by a slice of grilled green tomato. Top this with 2 thin slices of sweet Vidalia onion and a butter lettuce leaf. Before topping, make sure to spread 2 tablespoons of roasted garlic mayo on the top bun. Then place the top bun on top. Serve immediately. Makes 6 Burgers.
