Roasted Ragu Burger

3 lb Ground beef (80% lean)
4 oz Blue Cheese
6 Kaiser Buns
Grey Poupon Mustard Ragu
1 Toasted Green Pepper (chopped)
2 Roasted Jalapaino Peppers(Chopped)
1c Toasted Tomatoes (chopped)
1/4c Colivita Olive Oil
1 Med. Onion (chopped)
3 Cloves Garlic (minced)
1t Honey 1/4t Nutmeg
1/2c Sutter Home Chardonay
3T Fresh Cilantro leaves (chopped)
Salt & pepper to taste



Divide beef into 6 portions make patties of each one. Devide cheese into 6 patties slightly smaller than burger patties. Slice burgers in half, place cheese pattie between sliced burger patties pinch edges of burger together all the way around to close. Cover with plastic wrap & place in fridge until ready to grill. Ragu Coat tomatoes & peppers with 1/2 of the Colivita Olive oil then roast directly on flam of grill. Peel skin off & chop. Heat remaining Colivita Oil in sauce pan add onions cook untill just translusent. Add garlic continue cooking @ 30 sec. add tomatoes, peppers, wine, honey, nutmeg, salt & pepper to taste continue cooking @ 15-20 min. or until liquid is evaporated. Remove from heat stir in cilantro salt & pepper to taste. Cover with plastic wrap & chill throughly. Heat grill to med. high heat place burgers on grill cooking @ 4 1/2 min flip & cook another 4 1/2 min. Remove from grill spread Gray Poupon mustard on both sides of the bun, place burger on bun & top with the Roasted Tomato/Pepper Ragu. Serves 6
