Ronnie’s Juicy cilantro and Cojita cheese burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

1 cup cilantro
1 garlic clove
1 cup cojita cheese
1/2 cup of mayo
1.5 cups of additional mayo
1 cup fresh cilantro
1 garlic glove
1 cup of red onion
1 1/2 cup of crumbled cojita cheese
1 teaspoon of fresh green chilies
1 pound of chuck roast
2 teaspoon of salt
2 pound of ground hamburger
1 egg
1 slice of whole wheat bread
6 torta rolls
6 torta rolls
romaine lettuce 6 LARGE pieces

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. ******

TO MAKE SAUCE:

in food processor add, cilantro, garlic clove and cheese and pulse for 45 seconds, add in 1/2 cup of mayo and pulse 20 times

put into a small bowl and fold remaining 1.5 cups of mayo

put into fridge to chill. *****

TO MAKE PATTIES:

1. in food processor add cilantro, garlic clove, and red onion and mix on high for 1 minute

2. add in cojita cheese, and green chilies and pulse on low for 30 seconds

3 on cutting board cube the chuck roast into small pieces

3. add chuck roast and salt to food processor and pulse on low for 30 seconds

4. pour mixture from the food processor into a large mixing bowl

5. then in same large mixing bowl add 2 pounds of ground burger, and egg

6.dice up 1 slice of wheat bread and put into same large mixing bowl with the meat mixture

7. Then mix ingredients in the large mixing bowl with hands until its all well mixed

8. form 6 large patties
When the grill is ready place the patties on the rack, cover, and cook, turning once, until done to preference, 4 to 5 minutes on each side for medium.

place the torta, cut side down, on the outer edges of the grill rack and toast lightly. *****

TO ASSEMBLE BURGERS:

place just under 1 tablespoon sauce and cooked burger onto torta bun with I slice of red onion and I piece of lettuce . serve!!
