Ingredients:

SABROSA SALSA

2 oz chopped onion
4 oz chopped seeded tomato
1oz chopped red bell pepper
1 tablespoon chopped fresh jalapeno
2 oz chopped fresh cilantro
1 tablespoon fresh lemon juice
2 oz vegetable oil
1 garlic clove
1/4 teaspoon salt
1/8 tespoon brown sugar
1 teaspoon chopped fresh parsley

FILLING

1 tablespoon vegetable oil
4 oz italian mild sausage, minced
3 oz yellow onion minced
1 oz red bell pepper, minced
1 oz green bell pepper, minced
1 teaspoon jalapeno minced
1 teaspoon garlic cloves minced
1 oz raisins
1 oz capers
2 oz manazanilla olives, minced
1/2 teaspoons salt
1/2 teaspoon black pepper
2 oz chicken stock
1 oz ZINFANDEL wine

PATTIES

1 1/2 Lb lean ground beef chuck
1 tablespoon vegetable oil
1 teaspoon salt
1 teaspoon ground black pepper
6 kaiser rolls

TOPPING

6 Curly leaf letucce leaves
6 Slices tomato ( 1/4- inch -thick)

Instructions:

Prepare first the SABROSA SALSA.
Place all ingredients in a food processor at low speed until it form a salsa.
Keep refrigerated until be used.

Heat a medium nonstick skillet coated with 1 tablespoon of oil. Add onions, garlic cloves, cook for 3 minutes, stirring occasionlly. Add the red and green peppers, cook 5 minutes, stir until the onion get a golden color. Add the minced sausage, stir until the sausage be cooked. Add capers, olives, raisins, chicken, wine ,salt and pepers. Cook until the chicken stock be reduced at half.

Seasoned beef with salt and peppers, add oil and mix.

Divide beef into 6 portions. divide 1 portion in a half, then flatten 1 half into 4-inch patty and form a 1/4 – inch rim around patty.
Spread 1 1/2 tablespoons of filling
onto patty within rim. Flatten remaining half into 4 – inch patty.Covered half and pinch edges together to seal .
Make 5 more filling patties in the same manner and transfer to tray, then cover patties and refrigerated until ready to grill.

Prepare a gas grill, preheat burners on high,
covered, 10 minutes, then if necessary, reduced to moderately high heat.

Lightly oil grill rack, then grill,covered, patties turning over once, 4 minutes each side, or until done.

Place the kaiser rolls, cut sides down, on a grill rack, gril 1 minute or until toasted.
Place 1 curly leaf letucce leave on bottom half of each roll, place 1 patty onto letucce leave, place 1 slice tomate onto patty and serving with 2 tablespoons Sabrosa Salsa and top half of roll.
