Salade Nicoise Burger

tuna 16 ozs (4ozs. per burger)
1 medium chopped black pepper
1/2 teaspoon parsley small handful
sea salt to taste
olive oil to moisten mixture
anchovy 3 filets
black olives
20-25 medium capers
about a tablespoon mayonnaise
1/2 cup green beans 4-5 per burger
tomato 2 slices per burger
Boston lettuce 3 leaves per burger
hard boiled egg 3-4 slices per burger
french bagette 6 inch piece per burger



Combine tuna, shaillots, pepper, parsley, and olive oil into oval shaped patties to be grilled. Mix anchovies, black olives and capers with mayonaise. Hard boil eggs. Blanch green beans. Slice tomato. Rinse lettuce. Cut french bagette into a six inch piece and cut open. Place grilled tuna patty on bun. Spread with mayonaise. Layer green beans, sliced boiled egg, sliced tomato and lettuce. Enjoy!
