Sangria Spiked Spicy Pork Burgers

Ingredients

  • Marinated Fruit:
  • 1 Cup Sutter Home Sangria
  • 1 large ripe mango, peeled and cut into 6 large wedges
  • 2 peaches, each cut into 6 large wedges
  • Slaw:
  • 1/4 Cup apple cider vinegar
  • 1/4 Cup grapeseed oil
  • 2 tablespoons Sutter Home Sangria
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces pre-cut slaw mix
  • 1/4 Cup roughly chopped cilantro
  • Whipped Cottage Cheese
  • 1 small lime
  • 1/2 Cup cottage cheese
  • 1/4 Cup salted and roasted pepitas
  • Jerk Spice
  • 1/4 Cup light brown sugar
  • 1 tablespoon allspice
  • 1 teaspoon red pepper flakes
  • 1/4
  • teaspoon ground cinnamon
  • 1/4
  • teaspoon ground cloves
  • 1/4
  • teaspoon ground cumin
  • 2 Teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • Patties:
  • 2 jalapeno peppers
  • 2 Pounds ground pork
  • 6 slices pepper jack cheese
  • 6 leaves butter lettuce
  • 6 Hawaiian style sweet hamburger buns

Instructions

  • 1. Combine Sutter Home Sangria, cut mangoes and peaches in a plastic bag. Set aside to marinate.
  • 2. In a medium bowl, combine the apple cider vinegar, grapeseed oil, Sutter Home Sangria, salt and pepper. Whisk until combined. Add in slaw mix and cilantro. Toss to coat.
  • 3. Refrigerate until ready to use.
  • 4. Zest and juice the lime. Add to a medium bowl with cottage cheese.
  • 5.
  • Using an immersion blender or mixer, whip mixture until smooth. Fold in pepitas. Set aside.
  • 6. In a large bowl, add ingredients for jerk seasoning mix. Mix well to thoroughly combine.
  • 7. Preheat a gas grill to medium high heat
  • 8. Place jalapeno peppers on grill. Cook, turning halfway through for
  • 5-6 minutes or until slightly charred. Remove from grill, de-seed and chop finely.
  • 9. Combine the ground pork with the Jerk seasoning and chopped jalapenos. Mix well and form into 6 patties.
  • 10. Cook pork patties on gas grill over medium-high heat for 5 minutes each side. During last 2 minutes add slices of pepper jack cheese and cook until melted.
  • 11. Remove fruit from marinate. Add fruit slices to grill and cook for 1-2 minutes each side or until lightly charred. Remove from grill and cut into smaller pieces.
  • 12. To assemble burgers, spread whipped cottage cheese on bottom bun and top with lettuce leaf, patty, slaw, grilled fruit and bun top.
