Saucy Sofrito Burger

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

To create a really flavorful burger


1 ½ pound ground turkey

½ pound Italian sausage, bulk not casings

1/3 cup bottled chili sauce (i.e. Del Monte)

½ cup finely chopped onion

2 cloves garlic, minced

2 tablespoon Italian parsley, chopped

1 teaspoon coarse salt

½ teaspoon fresh ground black pepper

1 tablespoon chili powder

¾ cup mayonnaise

¼ teaspoon cayenne pepper

6 Kaiser rolls

2 tablespoon olive oil

1 head of butter lettuce or red tipped lettuce

6 slices ripe tomato


Preheat grill to medium high heat. In a large mixing bowl, combine turkey through black pepper and shape into 6 burgers. Grill burgers 4 to 6 minutes each side or to desired doneness. Meanwhile in a small mixing bowl combine chili powder, mayo and pepper. Two minutes before burger done, brush rolls with olive oil and toast lightly on grill. Remove rolls and spread both sides (top and bottoms) with chili-mayo. Place burger on each roll bottom. Top with lettuce and tomato and roll tops. Serves 6
