Savory Burgers Italiano

Ingredients

Cooking spray
1/2 cup Sutter Home Merlot Wine
1/4 cup sundried tomatoes, not packed in oil
1/4 cup finely chopped yellow onion
1/4 cup chopped fresh basil
1/2 cup freshly grated provolone cheese
1 lb. ground chuck
1/4 tsp. coarse salt
1/4 tsp. fresh ground pepper
12 slices Italian sandwich bread
1 1/2 tsps. Colavita Olive Oil with Essence of Basil
3 round slices of pre-packaged Smoked Provolone Cheese, cut in half to form 6 pieces
6 slices of jarred Garlic and Oregano Roasted Red Peppers
6 fresh basil leaves

 

Instructions

1. Spray grill with cooking spray and preheat grill to low. 2. Pour wine into a small saucepan and place on grill. Heat to a boil; 7 minutes. 3. Remove from heat; add tomatoes and let stand 20 minutes covered until soft. 4. Chop onion and set aside. 5. Chop basil and set aside. 6. Grate Provolone Cheese and set aside. 7. Drain tomatoes, gently squeeze out extra moisture and chop. Set aside. 8. Put meat into a bowl and add chopped onions, basil, grated cheese, tomatoes, salt and pepper. 9. Using your hands, gently mix but do not overmix. 10. Form meat mixture into 6 burgers. 11. Grill on low covered for 3 minutes. Turn and grill for another 3 minutes. 12. Grill bread for 1 minute until lightly toasted. 13. Remove bread from grill and drizzle 1/8 tsp. of Colavita Olive Oil on one side of each grilled bread slice. Set aside on platter. 14. Top each burger with a piece of the Smoked Provolone Cheese. 15. Cook for 1 minute until cheese is melted slightly. 16. Remove the burgers from the grill. 17. Top each burger with a slice of roasted red pepper and a leaf of basil. Serve between the slices of grilled Italian sandwich bread.
