Savory Mushroom Merlot Burgers

1 large red onion
5 tbs olive oil
2 tsp salt
2 lbs fresh ground beef
1 1/2 teaspoons thyme
1 1/2 teaspoons sage
1 1/2 cups sliced mushrooms
1 teaspoon sugar
1/2 cup merlot
1 tablespoon fresh rosemary
1 cup mayo
2 tablespoons lemon juice
1 teaspoon chili powder
1/2 teaspoon liquid smoke
6 brioche buns
1 cup arugula



First finely dice the red onion and saute over medium heat with 2 tbs of the olive oil and 1/2 tsp of salt until lightly browned and allow to cool. Next mix beef, thyme, sage, 1 tsp salt and onion mixture together. Form into patties and grill. While patties are cooking saute mushrooms with 1 tb olive oil sugar and 1/2 tsp salt until golden, add merlot and reduce until thickened. Remove beef from grill when it has reached desired doneness and allow to rest. Finely chop rosemary. Combine mayo and rosemary and next 3 ingredants. Brush halfed buns with olive oil and grill face down until browned. Spread 1 tb rosemary alilo on bottom half of bun, place pattie on bottom half of bun, top with mushroom mixture, arugula and cover with top half of bun.
