Savory Smothered Burgers

Ingredients

Roasted Garlic:
1 head garlic
1 Tbs extra virgin olive oil
½ tsp kosher salt
1 tsp pepper
Savory Mushrooms:
4 Tbs butter
2 cups sliced cremini or baby bella mushrooms
1 Tbs Kitchen Bouquet
½ cup Sutter Home Merlot
Burgers:
2 lbs ground chuck
Roasted garlic
3 Tbs chopped fresh thyme
2 Tbs mayonnaise
¼ cup finely chopped cremini or baby bella mushrooms
2 tsp kosher salt
Grape seed oil, for brushing grill
6 slices swiss cheese
6 Onion Buns, split

 

Instructions

Directions: Preheat grill to medium-high heat, around 350-400 degrees. To make roasted garlic, slice off top ¼ of garlic head and place on a small sheet of aluminum foil. Drizzle olive oil over garlic head and sprinkle with salt and pepper. Wrap foil tightly around head and place on grill for 20-30 minutes. Remove from grill and let cool. To make the savory mushrooms, melt the butter in a small sauce pan on the grill. Add the mushrooms, Kitchen Bouquet, and merlot. Mix well to combine and sauté until liquid reduces in half. Remove from heat, cover until serving. To make the burgers, place the ground chuck in a large bowl. Unwrap the garlic head and gently squeeze the garlic out the cut end of the head into the bowl with the meat. Add the thyme, mayonnaise, chopped mushrooms and salt to the meat mixture in the bowl. Careful not to over handle the mixture, mix well to combine. Divide the mixture into 6 equal portions and form into patties. Carefully wipe the grill rack with the oil. Place burgers on the grill rack, cover and grill until bottom is seared but not burned, about 4-5 minutes. Turn burgers and continue grilling another 5 minutes for a medium burger or 6-7 minutes for a medium well done burger. Place a slice of swiss cheese each burger. Place sliced rolls on the coolest section of the grill to gently toast. Remove the rolls when golden brown. Turn off grill. To assemble the burgers, place the burger on the bottom half of the roll. Top the burger with a generous scoop of the savory mushroom mixture. Cover with the roll top and serve. Makes 6 Savory Smothered Burgers
