Schwarzwalder Kirschburger

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

Ingredients

for the patties:
1/2 cup dried cherries
1/2 cup Sutter Home Gewurztraminer
7oz. Black Forest Prosciutto
2.25lbs. Ground Chuck, about 20% fat
2tsp. Kosher salt
1tsp. freshly ground black pepper
for the topping:
1 cup Bavarian style sauerkraut with caraway seed
1/2 cup Grey Poupon Spicy Brown Mustard
6 Gourmet-style Kaiser rolls

 

Instructions

Start a medium-hot fire in the grill. Chop the cherries, and soak them in the Gewurztraminer for 30 minutes, or until they reconstitute. Chop the Black Forest Prosciutto and mix in a bowl with the Ground Chuck. Season the mixture with the salt and pepper and add the cherries when they are ready. Form into 6 patties 3/4" thick at most, being careful not to over work the mixture. Place patties directly over the heat to sear the outside, then move off of the direct heat to finish. While the patties are cooking, mix up the sauerkraut and Grey Poupon. Just before removing the patties, put the Kaiser rolls over the direct heat to toast. Put finished patties on toased roll, and top with the sauerkraut mustard mix.
