Sea Slaw Burger

This burger is representative not only of New Jersey known as the “garden state,” due to its use of coleslaw but its also representative of the states hugh atlantic “sea” shore…hence its name…sea slaw burger.It ties everyone from coast to coast to those fond memories of having a burger near the water…whether its the ocean, a lake or a backyard pool.

Ingredients:

Cole Slaw:

3/4 cup mayonnaise
1/4 cup dijon mustard
1 tbsp. sour cream
1/4 cup buttermilk
2 tbsp. cider vinegar
1/4 cup packed light brown sugar
4 tbsp. celery seeds
1 tsp. kosher salt
1/4 tsp. cayenne
3/4 head of shredded napa cabbage
1/4 head shredded red cabbage
1 lg. sweet carrot peeled and shredded
1/2 lg. sweet or vadalia onion peeled and shredded

Burger:
1/2 cup olive oil for the grill
3 lb. ground beef sirloin
3 tbsp. Worcestershire sauce
3 tsp. kosher salt
1 tsp. fresh cracked black pepper
6-pre-sliced wheat sandwich thins
12-unadorned wooden skewers

Instructions:

In a medium size bowl combine the mayonnaise, dijon, sour cream, buttermilk, cider vinegar, light brown sugar, celery seeds, salt and cayenne. Whisk until the sugar is dissolved.

In a large bowl, combine the napa cabbage, red cabbage carrot and onion. Toss to combine. Pour the mayonnaise dressing over the coleslaw and toss until well combined. Cover and refrigerate to chill slightly before serving.

Lightly brush the grill grates with olive oil.Prepare a medium hot fire in a charcoal grill with a cover, or preheat a gas grill to 350 degrees.

Place beef sirloin in a medium bowl. Add Worcestershire, salt, and pepper. Mix thoroughly. Divide equally into six equal patties.

After the grill is pre-heated, place patties on the grill. After five minutes rotate the patties 45-degrees. Grill for an additional 4 minutes. Turn the patties over and grill for an additional five minutes. Rotate the patties 34 degrees and grill for an additional 3 minutes. During the last 3 minutes of grilling, place the sandwich thins on the grill until lightly toasted and remove from grill.

Place the burger on the bottom bun. Top the burger with coleslaw. Cover with the top of the sandwhich thin. Cut the burger in half. Place wooden skewers in each half. Serve and Enjoy!
