SHOW-ME-THE-MOCHA BURGERS

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

Ingredients

HONEY-LIME GLAZED PEACHES
2 ½ cups fresh peaches, peeled and sliced
1 tbsp fresh lime juice
3 tbsp clover honey
PATTIES
¼ cup sesame seeds, toasted
1 ½ tbsp Colavita olive oil
¼ cup sweet onion, coarsely chopped
2 tsp minced garlic
2 1/4 lbs. ground chuck
6 tbsp semi-sweet chocolate morsels, coarsely chopped
¼ cup jalapeños, nacho-style, seeded and chopped
1 tsp allspice
3 tsp Pepper Sauce
2 tsp kosher salt
2 eggs
¼ cup plain breadcrumbs
oil for grill
BUNS
6 soft Kaiser Rolls

 

Instructions

DIRECTIONS For the Lime-Glazed Peach Slices, in a large mixing bowl, combine lime juice, and honey. Add fresh sliced peaches to this mixture. Toss lightly to coat peaches. Prepare gas grill for medium-hot heat. In a small heat-resistant skillet, lightly toast the sesame seeds on grill and set aside for upcoming use in burger mixture. In a second heat-resistant skillet, add the olive oil and lightly sauté the onion and garlic, set aside for upcoming use in burger mixture. In a large mixing bowl, add the ground chuck, chocolate morsels, jalapeños, allspice, pepper sauce, salt, eggs, and breadcrumbs. Add the prepared sesame seeds, onion and garlic. Combine all ingredients. Divide mixture into 6 even ¾-inch thick patties. Brush olive oil over grill rack and grill patties with top closed for 4-6 minutes per side, until meat thermometer reads 160 degrees. Remove from heat. For buns, cut buns in half lengthwise and grill cut-sides down until lightly toasted. Remove buns and keep warm. To serve, place burger patty on bun bottom and top with prepared peach slices. Repeat for other burgers. Makes 6 burgers.
