Shrimp Cocktail And Avocado Caprese Burger

Ingredients

  • For Cocktail sauce:
  • 6 tablespoons Tomato ketchup
  • 1.5 tablespoons Prepared horseradish
  • 1 tablespoon Worcestershire sauce
  • 3/4 teaspoon Lemon juice
  • 1 tablespoon Soy sauce
  • 3/4 teaspoon Tabasco (adjust the amount based on your preferred spiciness)
  • 1/4 teaspoon Black pepper
  • For Basil oil:
  • 3/4 Teaspoons Dried basil
  • 3 tablespoons Olive oil
  • 3/8 teaspoon Garlic salt
  • 3/8 teaspoon Black pepper
  • For patties:
  • 72 Raw medium shrimp, peeled, deveined and tail removed
  • 1.5 tablespoons Sutter Home Chardonnay
  • 1 tablespoon Cornstarch
  • 3 cloves Garlic
  • 1/4 teaspoon Salt
  • 3/8 teaspoon Black pepper
  • 3/8 teaspoon Dried basil
  • 3/4 Cup Panko breadcrumbs
  • Others:
  • 2 tablespoons Olive oil for brushing the grill rack
  • 1.5 Avocados
  • 6 slices Tomato (1/6-1/4-inch thick)
  • 1 ball (8 Ounces) Fresh mozzarella cheese
  • 6 Brioche buns, split

Instructions

  • 1. Preheat the gas grill to medium-high.
  • 2. Make cocktail sauce. In a bowl, mix all ingredients for the cocktail sauce and set aside.
  • 3. Make basil oil. In another bowl, mix all ingredients for the bail oil and spread on bottom of each brioche evenly.
  • 4. Make patties. Pat shrimp dry with paper towels and chop shrimp. Put the shrimp into another large bowl with cornstarch and wine. Mix to combine. Peel and grate garlic cloves then put into the shrimp bowl with panko, basil, salt and black pepper. Mix to combine. Divide the mixture into six and shape each into patty.
  • 5. Halve each avocado, pit and scoop avocado flesh out. Cut each halved avocado into 6 slices lengthwise.
  • 6. Cut the mozzarella cheese into 6 slices.
  • 7. Brush the hot rack of the grill with 2 tablespoons olive oil. Place patties on the grill rack. Cook patties until browned. Flip the patties, cook the other sides until browned and patties are cooked through. Take the patties out and place on a plate. Cover with aluminum foil loosely to keep them warm.
  • 8. Put the both top and bottom of the brioche, cut sides down, on the outer edges of the grill rack. Toast buns until the cut sides are lightly browned.
  • 9. Built burgers. On the bottom of the brioche, put 3 avocado slices, 1 tomato slice, 1 mozzarella cheese slice and 1 patty. Spread 1/6 of cocktail sauce over the patty and put the top of the brioche to cover. Press top gently. Repeat this with the rest of brioche, avocado slices, tomato slices, mozzarella cheese slices, patties and cocktail sauce.
