Sicilian Burgers with Caponata Relish

Ingredients

Caponata Relish
1/3 cup red wine vinegar
1/3 cup sugar
1/4 cup olive oil
large chopped vidalia or sweet onion
2 celery stalks diced small
1 1/2 tablespoons minced garlic 
1 large eggplant
1 can chopped tomatoes or 5 medium to small chopped seeded tomatoes
1 cup pitted green olives
Patties
1 pound ground sirloin
1 pound ground chuck
1/3 cup Shiraz or Nero d'Avola
1/4 cup olive oil
1/3 cup bread crumbs
1/4 cup Balsamic vinegar
6 basil sprigs

 

Instructions

Prepare a medium-hot fire in a charcoal grill or preheata gas grill to medium-high. To make the Pesto Relish, in a small saucepan, combine the vinegar and sugar and cook over medium heat, stirring constantly until the sugar dissolves, about 2 minutes. Pour this mixture into a cup and let cool. In same pan heat the Colavita Olive Oil and add onions and celery and saute until just translucent. Add the garlic and saute for about one minute. Add the eggplant and salt and cook until softened. Add the tomatoes and saute for approximately 5 minutes or until slightly thickened. Add the vinegar mixture. Cover and refrigerate until needed. To make the patties, combine the sirloin and chuck, Shiraz or Nero d'Avola, olive oil, bread crumbs, hot Pepper Sauce, and the Balsamic vinegar in a large bowl. Handle the meat as little as possible, but make sure the mixture is distributed equally. Divide the mixture into 6 equal portions and form into patties to fit the rolls. When the grill is ready, brush the grill rack with olive oil. Place the patties on the grill rack and cover and cook until slightly browned on the bottom for approximately 4 to 7 minutes on each side, or to your preference. Turn the patties and brush slightly with olive oil and cook for approximately 3 to five minutes longer. Place the rolls, cut side down on the grill during the last few minutes of cooking to toast slightly. To assemble: Spread the relish on the cut bottom side of the ciabatta. Add burger and place a basil sprig, the burger and top the burger with more relish. Add the ciabatta top and serve.
