Ingredients

1/2 Pound Butter (wine marinade, meat, buns)
1 Large Red onion (wine marinate, burger prep)
1 Cup Sutter Home Zinfandel Wine (marinade)
Cracked pepper (sauce, meat)
2 Pounds Ground Brisket
1 Cup Essence (rub)
1 ½ Tablespoons Kona Coffee- finely ground (rub)
1 Tablespoon Ground Chipolte Pepper (rub)
8 Slices Swiss Cheese
8 Whole Wheat Baker's Rolls
1 Cup mayo (condiment)
1 Tablespoon Grey Poupon Mustard (condiment)
1 Tablespoon Fresh Basil (condiment)
1 Teaspoon Dried Lemon Grass (condiment)
1 Large Tomato- sliced (finished burger)
2 Large Hot Zesty Pickles- sliced lengthwise (finished burger)

 

Instructions

Sinful Zinfal Marinade- 3 Tablespoons Butter 1/3 Cup Red Onion, Finely Chopped 1 Cup Sutter Home Zinfandel Wine Heat Butter Sauté Onion in Butter Add Cracked Pepper Add Wine Reduce to 2/3 Let Stand to Room Temp Miracle Mustard Condiment- 1 Cup mayo 1 Tablespoon Grey Poupon Mustard 1 Tablespoon Fresh Chopped Basil 1 Teaspoon Thai Kitchen Dried Lemon Grass Mix Together and Refrigerate for at Least 1 Hour Kickin’ Kona Rub- 1 Cup  Essence 1 Tablespoon Finely Ground Kona Coffee 1 Tablespoon  Chipolte Pepper Mix Dry Ingredients Together Place in Shaker Burger Preparation- Cut 2 Pounds Brisket into 1/2 Inch Cubes and Grind Melt 4 Tablespoons Butter and Let Cool Slightly Break Ground Brisket Apart in Large Mixing Bowl Add Cracked Pepper Drip Cooled Butter Evenly Over Ground Brisket Slowly Pour Cooled Wine Marinade Over Ground Brisket Fold Ingredients Together Until Blended With Both Hands Form Blended Brisket Into Baseball Size Portions and Press Into Patties Sprinkle Both Sides of Patties with Kickin Kona Rub Place Patties on Platter w/Wax paper to Separate Cover and Refrigerate for at Least 1 Hour Cook Burgers- Heat Grill Add Burgers When Grill is Hot Cook for 5 Minutes and Flip Cook Until Medium Well- 3-4 Minutes Add a Thin Pat of Butter and Top with Swiss Cheese Close Grill to Assist Melting of Cheese Remove From Grill and Let Rest Preparation of Rolls- Slice Rolls in Half Brush Melted Butter on Roll Face Grill Until Slightly Toasted and Remove Burger Construction- Lightly Spread Mayo Mustard on Both Halves of Toasted Rolls Add Burger Cheese Side Up Place Sliced Red Onion, Tomato, and Pickle to Burger Cover With Top Half of Roll
