Skundy Burgers with the Works

Every pour of our Pinot Noir brings you a delicious blend of berry flavors and the romantic aroma of violet.

Ingredients:

2 lbs. 90% lean ground beef
Half of small onion, chopped
2 cloves garlic, minced
1 tsp. rosemary, crushed
Half tsp. ground sage
Half tsp. ground black pepper
Half tsp. salt
6 slices pepper jack (any cheese will work)
6 large Kaiser buns

The Works:
Half Tbs. olive oil
Half Tbs. butter
1 onion, sliced and then cut in half
1 pepper, sliced
2 cloves garlic, minced
Half lb. mushrooms, sliced
Half cup red wine (merlot)
Quarter tsp. Cajun seasoning (if you do not have Cajun seasoning you can use cayenne pepper)
Salt and pepper to taste

Instructions:

1. Place ground beef in a bowl. Add remaining ingredients and gently mix (this will keep burgers from being too compact). Divide the ground beef mixture into 6 even balls and use a plate to make into patties. Do not over work the meat.

2. Grill burgers over hot coals. Please note if made according to the directions, each burger will be around 1/3 lb., so make sure that you cook the burger long enough. My grill takes around 7-8 minutes on the first side and then and additional 5-6 minutes on the other side. Cooking time will vary based on heat of grill. Add cheese for the last minute of cooking.

Remove burgers from grill.

3. If you are going to have a true Skundy Burger you must have “The Works”. Before you begin grilling the burgers you should begin making “The Works”.

Begin by placing a large sauté pan over a medium heat and adding oil and butter. When hot (but not smoking) add onions and peppers and cook until they begin to get soft (3-5 minutes), stir while cooking. Add garlic and cook another 1-2 minutes, continue to stir.

Add mushrooms and cook an additional 5 minutes, continue to stir. Turn heat up to high and add wine. Cook over high heat until liquid reduces by 1/2, continue to stir. Turn off heat, add Cajun seasoning, salt and pepper.

4. After burgers are done, place buns on grill to toast lightly. Place burgers on roll and add a health portion of the works.
