SloRode’s Blue Horse Burger with Burbon Wash Bacon

Pairs well with:

Ingredients

PATTIES
1.5 lbs 93% Ground Beef
1.5 lbs 75% Ground Beef
2c Fresh Horse Radish (shredded)
1c Spanish Sweet Onion (chopped)
1/3c Fresh Garlic (minced)
2 eggs
2 1/2tbs. Kosher salt
1 tsp Fresh Ground pepper
1/3c Water
18 Strips thick cut Bacon
6oz. of Danish Blue Cheese
BURBON WASH
1/4c good burbon
2 tbs Brown sugar
Romaine Lettuce
Beef Steak Tomatoes
1/2c Mayonnaise
1/2c soft butter
vegetable oil, for brushing on grill rack
6 Kaiser rolls
wax paper

 

Instructions

Prepare a medium heat fire in a charcoal grill with a top or preheat a gas grill to medium tempture. To make your bacon wash, take 1/8c of your burbon and place in a small sauce pan, add the brown sugar and heat just enough to disoulve the sugar, be careful the mixture doesn't flare up. After sugar is disoulved remove from heat and place in a small bowl and let cool for about 5min, then add rest of the burbon and set aside. Fry the bacon as normal to the desired crispness, when finished place bacon on a wire rach, a pastry rach will work fine, with the bacon resting on the rack, take a pastry brush and dab the burbon wash on both sides of the bacon. Don't be afraid to get the bacon strips wet, set aside till later To make the Horse Radish get a nice size root and peal. With a food processor shread until you get 2cups. Crumble the Blue Cheese in a seperate bowl and set aside. To make the patties, combine the ground beef,onion, garlic, eggs,2tbs salt, 2/3 tsp pepper,1/3c water, and 1 3/4c horse radish in a large bowl and combine until completely blended. Make 12 portions about 1/4lb each, slightly larger that a golf ball. take 2 at a time and press flat to the size of your rolls. Add 2tbs of the blue cheese, about 1oz. in the center of one of the patties, take the other and place on top and seal the edges together. Do this to all patties before you go to the grill. When the grill is ready, brush with the vegetable oil. Place the patties on the rack, cover and cook until done to preferance, turning only once. about 6-9min. on each side. During the last few minutes of cooking place 3 strips of Bacon on each patty to rewarm, also place the Kaiser rolls cut and buttered side down on the outside of the rack to toast lightly. while patties are cooking take the remaining horse radish and chop, add this to the mayonnise. Slice the tomatoes into 1/4inch slices and season with salt and pepper. To assemble the burgers place the burger with bacon on the bottom bun add a seasoned tomato slice and a leaf of romain lettuce. On the top bun spread the mayonnaise, place on burger and serve
