Smoked Short Rib Burger with Beer Cheese & fried Greed Tomatoes
I love bold flavors that stand out in every bit
Ingredients:
1.5 lb Prime Beef Short Rib
1 lb Prime Beef Chuck
8 oz Ale beer
3 cups Sharp White Cheddar
1 table spoon Granulated Garlic
.5 tablespoon Sugar
1.5 tablespoon Tabasco sauce
1 tablespoon Ground Mustard
1.5 tablespoon Worcestershire sauce
3 each Green Tomatoes
4 cups Panko Bread Crumbs
5 ea egg
3 cups flour
.5 cup kosher salt
.5 cup fresh ground Black Pepper
4 ea Dill Pickles
.5 cup Olive oil
1.5 tablespoon Chili Flakes
.5 gallon Canola Oil for frying
6 each Potato Buns
.5 cup Whole Butter
Instructions:
Grind short rib & Chuck
Form ground beef into 6 oz patties & let rest
In a food processor add white cheddar, ground mustard, tobacco, granulated garlic, Worcestershire sauce, & beer, salt & pepper & sugar and blend until smooth.
set beer cheese aside
slice green tomatoes discarding the core
season with salt & pepper
dust sliced tomatoes with flour
drench tomatoes in beaten eggs then in panko bread crumbs
Set breaded tomatoes aside
Slice dill pickles length
Dress sliced pickles with olive oil & chili flakes & set aside
Pre heat canola oil to 350 degrees
pre heat grill to 400 degrees
Season beef patties with salt & ground pepper
Grill patties to 120 degrees or desired doneness
Fry tomatoes in hot oil then drain on paper towels
Cut buns in half
coat buns with butter and cook in pan until toasted
to assemble lay dressed pickles on bottom bun
add beef pattie
add t fried tomatoes
smear 2 tablespoons of beer cheese on top bun
