Smokey Cheddar Chipotle Burger

Ingredients

1. 1 1/2 lb. Ground Angus chuck
2. 2 packages Chipotle flavored taco seasoning mix
3. 1 oz. pepper jack cheese-sliced
4. 1 oz. smoked cheddar cheese-sliced
5. 1 cup (any brand) mayonaise
6. 6 Onion rolls
7. 12 Lettuce leaves
8. 12 Tomato slices

 

Instructions

Sprinkle one of the chipotle seasoning mix packets in the 1 1/2 lb. of ground angus chuck. Mix well Make 6 thin patties Put 1 oz of pepper jack cheese in the middle of the patties, leaving room around the edges for pinching together. Make 6 more thin patties Put the last 6 patties on top of the patties with the cheese. Pinch the edges together and make the patty edges smooth & rounded where no cheese is showing. Preheat gas grill to 350 degrees Brush grill with vegetable oil Place patties on grill Grill for 4 minutes on each side As soon as they are done, put 1 oz. of smoked cheddar cheese on top, melting the cheese. Take the 6 onion rolls, cut in half and lightly grill to your preference. Mix the 1 cup of mayonaise with the remaining packet of chipotle taco seasoning mix. Spread the chipotle mayonaise on the bun, add the cheeseburger patty, top with lettuce, tomato and purple onion.
