Plum salsa-1/2 cup chopped fresh cilantro+ 1/2 cup chopped bell pepper+ 4 fresh plums, peeled and chopped+ 1/4 cup thinly sliced green onions+ 2 tbsp. lime juice+ 1 1/2 avocado diced+ 1-2 fresh jalepeno finely chopped + Burger Ingredients- 1 3/4 pound ground round beef+ 2 tsp. Webers Grill Creations Gourmet Burger Seasoning+ 3 tsp. Worcestershire Sauce+ 6 oz. Crumbled Blue Cheese+ 8 tsp. Chipotle pepper adobo sauce+ 12 slices thick cut peppered bacon+ 6 chipotle peppers, cut in half lengthwise+ 6 grilled roasted garlic ciabatta rolls+ 2 tbsp. extra virgin olive oil
Prepare the Plum Salsa first so that the flavors can be melding together. Mix all the salsa ingredients together in a medium size bowl, cover and chill until burgers are ready.
For the burgers:
Mix the first 5 ingredients together and form into 6 patties.
Start cooking bacon in a cast iron skillet on a burner or on heavy duty foil on the grill. As bacon is cooking place the burger patties on the grill. Grill should be at med-high heat (around 350 degrees). Cook burgers for 8-9 minutes per side or until burgers reach desired doneness.
For buns: Brush each half of the bun with olive oil and toast on the grill.
When buns are toasted place burger on bun, place 2 slices of bacon on burger, top this with half of a chipotle pepper, and spoon salsa on top, top off with top of bun. Enjoy! They
