Smoky Polish Burger

Ingredients:

48 oz fresh ground chuck

1/2 tsp salt

1/2 tsp fresh ground black pepper

1/2 tsp paprika

1/2 tsp cumin

1/2 tsp baking soda

1/4 cup chopped Italian parsley

1/4 cup seltzer (sparkling water)

6 slices of smoked Gouda cheese

2 large red bell peppers

1 large tomato

1/2 lb Chantalle or shitaki mushrooms

6 sesame buns

1 large white onion

6 cloves of garlic

1/2 cup olive oil

1/2 lb smoked polska kielbasa

2 half sour pickles

2 tbs brown mustard

1 large egg

2 tbs liquid smoke

Instructions:

Mix in the following ingredients:

48 oz fresh ground chuck

1/2 tsp salt

1/2 tsp baking soda

1 large egg

2 tbs liquid smoke

form 6 equally sized patties

place on very hot grill until both sides are crisp

chop the onions, garlic and mushroom, fry in a pan with olive oil.

red pepper grilled and skinned

lightly toast the buns

place cheese on hot patties to melt.

grill thin sliced polska kielbasa and place on the burger

thin sliced tomatoes

to finish, place burger patties with cheese on a bun, spread one tbs of fried onion and mushroom

one slice of tomato and a few strips of red bell peppers

sprinkle with copped fresh Italian parsley
