Soft Taco Burger with Guacamole and Tex-Mex Aioli

Ingredients

-Guacamole
2 Ripe Avocados, mashed
1/4 cup Mayonnaise
2 oz Cream cheese, softened
1 teaspoon minced fresh garlic
Juice of 1 lime
1 Tablespoon minced yellow onion
1 Tablespoon chopped fresh cilantro
1/4 teaspoon salt
1t black pepper
-Tex-Mex Aioli
1 Cup Mayonnaise
1/4 teaspoon chili powder
1/4 teaspoon cumin
1 teaspoon Black Pepper
Juice 1/2 a lime
1 teaspoon minced fresh garlic
1 teaspoon chopped fresh cilantro
-Hamburger Patties
1 1/2 lbs ground chuck
1/2 lb Chorizo sausage, casings removed
1 teaspoon salt
2 teaspoon pepper
2 teaspoon chili powder
2 teaspoon cumin
2 Tablespoon Chopped fresh cilantro
2 Tablespoon minced fresh garlic
Vegetable oil for brushing grill rack
6 six inch flour Tortilla shells (Soft Taco Size)
1 1/2 cups shredded iceberg lettuce
1 cup shredded extra sharp cheddar cheese

 

Instructions

Directions
-Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

-To make the guacamole combine the avocados, mayonnaise, cream cheese, garlic, lime juice, onion, cilantro, salt, and pepper in a small bowl. Mix well to combine. Cover and refrigerate until ready to serve.

-To make the tex-mex aioli combine the mayonnaise, chili powder, cumin pepper, lime juice, garlic, and cilantro in a small bowl. Mix well to combine. Cover and refrigerate until ready to serve.

-To make the hamburger patties combine the chuck, sausage, salt, pepper, chili powder, cumin, cilantro, and garlic in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into six equal portions and form the patties into a 6 inch by 3 inch rectangle to fit the flour tortilla shells.

-Brush the grill rack with oil. Place the patties on the rack, cover and grill turning once, until done to preference. 3 to 4 minutes per side for medium.

-During the last few minutes of grilling wrap tortillas in aluminum foil and place on grill rack to warm through.

-To assemble burgers spoon 2 tablespoons of guacamole on half of flour tortilla, on the other half of flour tortilla spoon 2 tablespoons of aioli. Place patty on top of guacamole. Top the patty with 1/4 cup of shredded lettuce, and a 1/8 a cup cheddar cheese. Fold tortilla over the patty and serve.
