6 tablespoons peach preserves
1 tablespoon prepared horseradish
1 cup green tomato, chopped
2 cups fresh or frozen peaches, peeled and chopped
1/3 cup Colavita Extra Virgin Olive Oil
2 tablespoons apple cider vinegar
2 lbs ground sirloin
1 and 1/2 teaspoons salt
1 teaspoon black pepper
6 large seeded hamburger buns
6 medium green leaf lettuce leaves



In a small bowl, combine peach preserves and horseradish, cover, and refrigerate. In a separate bowl, combine green tomato, peaches, olive oil, and vinegar. Cover and refrigerate. Preheat gas grill to medium-high heat.
In a large bowl, combine sirloin, salt, and pepper. Divide into 1/3 lb burgers. Grill burgers for 7 total minutes on each side, turning as needed. Set aside. Spread 1 and 1/2 teaspoons of the peachy horseradish mixture on each side of each bun. Place on the grill for 30-45 seconds. Remove from grill. Put green leaf lettuce on bottom of each bun. Insert a burger into each bun. Top each with the peach salsa. Serve immediately.
