Southwest Roasted Corn & Black Bean Turkey Burgers

Ingredients

4 Tblspn Butter – Melted
1/4 Cup Green Onions – Chopped
1/4 Cup Red Onions – Chopped
1/4 Cup Red Bell Pepper – Chopped
1/2 Jalepeno Pepper – Chopped
1 Garlic Clove – Chopped
Pinch of Salt & Black Pepper
3/4 Cup Sutter Home Moscato Wine 1
1/2 lbs. Ground Turkey Breast
2 Tblspn Chili Powder
1 Tspn Salt
1 Tspn Black Pepper
1 Cup Queso Fresco Cheese – Crumbled
1/2 Cilantro – Chopped
3/4 Cooked Black Beans
3/4 Roasted Corn Kernels
1 Cup Unseasoned Bread Crumbs
1 Egg Beaten
Whole Wheat Kaiser Rolls
Cilantro Mayonaise
1 Cup Prepared Mayonaise
1/2 Cup Cilantro – Chopped
Juice of one Lime
Mix all together and chill in refridgerator.

 

Instructions

In medium saute pan, melt the butter and saute the next six ingredients for about five minutes on medium heat. Add the wine and allow to come to a boil and reduce by half. Set aside and allow to cool for about 15 minutes. In a nonreactive mixing bowl combine the next ten ingredients thoroughly. Add the cooled sauted vegetables and combine thoroughly. Form mixture into patties and grill over medium hot coals. Turning ofter to prevent over charring. Toast Whole Wheat Kaiser Roll on grill. Spread about two tablespoons of cilantro mayonaise on each bun. Enjoy with a glass of Sutter Home Moscato.
