Southwest Seafood Wrap

Ingredients:

Juice from 1 lime
Juice from 1 lemon
Juice from 1 orange
1/2 tsp sea salt
1 tsp sugar
1/2 tsp chipotle seasoning
1/4 tsp lea & perrins
1/4 cup chopped cilantro
2 lbs Alaskan cod
1 cup fresh spinach
1 cup diced tomato
1 cup purple onion diced
Olive Oil Spray
6 Southwest Tortillas
5 oz. Treasure Cave Shredded Blue Cheese

Instructions:

Combine juice from lime, lemon, and orange with, sea salt,sugar,chipotle seasoning, lea & perrins, and cilantro.
Use Mixture as marinade and pour over cod fish.

Preheat grill to medium heat. When hot place a layer of foil over grill and carefully place cod on foil. Grill approx 4 minutes each side.

When done pull foil and fish and set aside. Lightly spray each tortilla with olive oil and place on grill to heat.

Pull tortillas and place spinach, tomato, and purple onion in center of each. Divide Cod and place on tortillas. Sprinkle with Blue Cheese fold and serve.
