Southwestern Colby-Jack Stuffed Adobo Burgers w/ Green Onion Mayo

I have live half of my life here in Texas.Mexican food is on every corner you look . I happen to love Tex-Mex food and have really come to enjoy chipotle peppers. Most mexican food semes to be stuffed so I have stuffed the burgers to make them a little more interesting.The cheese ooses out of the burger and makes them more juicy and fun to eat! Enjoy!!

Ingredients:

Colby-Jack Stuffing:
1-1/4 cup finely shredded colby-jack cheese
2 chipotle peppers in adobo sauce,finely chopped
2 tbls. white onion,grated
1/2 tsp.cumin

Green Onion Mayo:
1 cup mayonnaise
3 green onion,sliced
1 garlic clove,peeled
1 tsp. lime juice

Patties:
36 oz. ground chuck
1-1/4 tsp. salt
1/2 tsp. ground black pepper
2 tsp. menudo seasoning
2 tbls. adobo sauce

*2-3 tbls. vegetable oil for greasing grill rack
6 white buns,split
6 leaves ,leaf lettuce
6 slices,red tomato
1 tsp.sugar

Instructions:

Prepare a charcoal grill to a medium-hot temperature or heat a gas grill to a medium-hi heat.

Prepare the Colby-jack stuffing: In a medium size bowl combine the shredded colby-jack cheese with the finely chopped chipotle peppers,grated onion and cumin,toss well,set aside,keep cool.

Prepare the green onion mayo:Using a food processor or blender ,process or blend the mayonnaise,green onion,garlic clove and lime juice,Blend until smooth,set aside,keep cool.

Prepare the Patties:In a large bowl combine the ground chuck,salt,blk. pepper,menudo seasoning and adobo sauce.Gently mix until combined handling the mixture as little as possible.Divide pattie mixture into 12 (3oz.) balls.

Pat 6 balls into a 4-5 inch size patties,equally distribute the colby-jack stuffing amoung the 6 patties keeping the mixture towards the center of the pattie.Leave a little lip around the edge of the pattie so the top and bottom patties can be sealed.Pat out the remaining 6 patties into 4-5 inch sized patties and place on top of the patties with the cheese mixture.gently press the two patties together making sure to press the edges together to seal shut.

When grill is ready brush the grill rack with the vegetable oil.Place the stuffed patties on the grill and cook for 4-6 minutes per side for medium ,turning once.Remove patties when done.

Place the buns cut side down around the outer edge of the grill for 1-2 minutes or until lightly toasted or warmed through.remove from grill.

Lay buns down cut side up , spread green onion mayo on the cut side of tops and bottoms of all 6 buns.To each bottom bun place a lettuce leaf ,tomato slice,sprinkle each tomato with a pinch of sugar,place stuffed patties over tomato and cover pattie with top bun.Serves 6.
