Spanikopita Burgers with Roasted Red Pepper Sauce and Saganaki

Ingredients

2 tablespoons olive oil
Burger Patties:
1/2 cup chopped red onion
1 chopped clove garlic
1 pound ground beef
1/2 cup spinach
1/4 cup Feta cheese
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
4 thick slices of Kasseri cheese
Roasted Red Pepper Sauce:
3 large roasted red peppers (from jar)
1 tablespoon olive oil
1/2 cup mayonnaise
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon mint
For assembly:
6 medium sesame seed buns
1 medium tomato thickly sliced

 

Instructions

Heat a large non-stick skillet over medium heat. When heated, add olive oil, chopped red onion, and garlic clove. Saute until brown and place onion and garlic in mixing bowl. To prepare patties, use bowl with onion and garlic. Mix in ground beef, spinach, feta cheese, salt, pepper, and oregano. Mix with hands and shape into four patties – each approximately one inch thick. Add patties to medium skillet and heat for 5-6 minutes per side, not turning until browned edges. When almost done cooking, top burgers with slice of Kasseri cheese and set skillet to low. To prepare the Roasted Red Pepper Sauce, combine roasted red peppers, one tablespoon olive oil, 1/2 cup mayonnaise, and a teaspoon each of salt, pepper, oregano, and mint in a food processor. Mix until a spreadable sauce forms. Brush buns with olive oil and quickly grill buns on grill until warm. To assemble, place beef patties on sesame seed bun bottoms. Spread Roasted Red Pepper Sauce on bun tops. Add tomato slice to finish assembly of the burger. Enjoy with a fine glass of wine and make sure to toast saying "Opa!".
