Speckled Fiesta Burgers with Zesty Lime Mayonnaise

Ingredients

Patties
2 lbs ground chuck
1 cup black beans
1 cup frozen corn, thawed and drained
¼ cup diced onion
2 Tablespoons chili powder
2 teaspoons salt
1 cup shredded Pepper Jack cheese
1 cup coarsely crushed corn tortilla chips
Colavita Extra Virgin Olive Oil for brushing on grill
Zesty Lime Mayonnaise
1/3 cup mayonnaise
¼ teaspoon lime zest
2 teaspoons lime juice
½ teaspoon finely chopped fresh cumin
1 Tablespoon chopped fresh cilantro
6 onion hamburger buns
1-2 large tomatoes cut into 6 ¼ inch slices
2 Fresh California Avocados, thinly sliced into 12 pieces

 

Instructions

Preheat a gas grill to medium-high heat or prepare a medium-hot fire in a charcoal grill with a top. Mix the ground chuck, black beans, corn, diced onion, chili powder, salt, and shredded Pepper Jack cheese in a medium bowl. Gently stir in coarsely crushed corn tortilla chips. Separate the meat into 6 pieces and shape into burger patties. Do not overwork; handle as little as possible to keep burgers tender. Generously grease the grill with Colavita Extra Virgin Olive Oil. Place the burger patties on the hot grill and cook the first side for 7-9 minutes. Flip and continue cooking for another 7-8 minutes, or until they are done to your likeness. While the burgers are cooking, prepare the Zesty Lime Mayonnaise. In a small bowl mix mayonnaise, lime zest, lime juice, cumin, and cilantro. Cover the bowl with plastic wrap and place in refrigerator until ready to serve. During the last 2-3 minutes of grilling, place the onion buns cut side down on the grill to toast. To assemble Speckled Fiesta Burgers spread Zesty Lime Mayonnaise on the top toasted buns and place burger patties on the bottom buns. Set a tomato slice and 2 avocado slices on top. Replace top bun. Makes 6 burgers
