Spicy Burgers with Avocado Mash

Ingredients

1 1/2 pounds ground chuck
1 1/2 tsp. chipotle chile powder
3/4 tsp. Kosher salt
cooking oil to grease grill
1 dark avocado, chopped coarsley
salt and freshly ground pepper to taste
1 cup sour cream
3 scallions, chopped
1 tsp. fresh cilantro, chopped
Juice of 1 lime
1 plum tomato seeded and chopped
3 tsp. of butter
6 sesame hamburger buns
6 burger size slices of Montery jack cheese

 

Instructions

1. Combine ground chuck, chile powder and Kosher salt in mixing bowl. 2. Cover and chill for 30 minutes. 3. Pre-heat gas grill to medium. 4. Prepare 6 burgers from meat mixture. 5. Grease grill rack with cooking oil. 6. Place burgers on grill and cook over direct medium heat. Cook 4-5 minutes on each side, turning only once. 7. To make avocado mash, combine avocado, salt, pepper, sour cream, scallions, cilantro and lime juice in mixing bowl. Fold in chopped plum tomato and set aside. 8. Cut buns in half and spread 1/2 tsp. of butter on each inside portion. Place buns, buttered side down on edges of grill rack to lightly toast. 9. When burgers are nearing completion of the second side of cooking, place one slice of cheese on each burger and close lid to allow cheese to melt. 10. To assemble burger, place one on each bottom bun and top with avaocado mash and top bun. 11. Serve immediately and enjoy.
