Spicy Honey-Maple Glazed Portabello Burgers w/Smoked Cheese and Bacon

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

6 Ciabatta Rolls sliced
6 Portabello Mushrooms
12 slices of bacon
2 thinly sliced avocados
6 slices smoky mozzarella cheese
spicy brown mustard
paprika
butter

Mayo spread:
2/3 cup quality mayo
1 – 2 T chopped sundried tomatoes
1/2 t smoked paprika
1 T finely chopped red onion
salt and pepper to taste

Glazing Sauce:
1/2 c brown sugar
1/4 c dark REAL maple syrup
1/4 c quality honey
2 T balsamic vinegar
2 T Worcestershire sauce
1 T dry ground mustard
1 T orange juice, fresh squeezed
1 T chopped garlic
pinch of paprika
pinch of black pepper

 

Instructions

Preheat grill.

Make ahead the mayo sauce. Set aside.

Make the glazing sauce….
1/2 c brown sugar
1/4 c dark REAL maple syrup
1/4 c quality honey
2 T balsamic vinegar
2 T Worcestershire sauce
1 T dry ground mustard
1 T orange juice, fresh squeezed
1 T chopped garlic
pinch of paprika
pinch of black pepper

Blend all ingredients in a sauce pan with a wire whip and heat slightly until everything combines.

Grill the bacon.

Grill the portabello and brush on glazing sauce until done.

Toast the buns. Buttered and sprinkled w/paprika

Assemble the burger from bottom to the top.
