Spicy Orange Cumin-Crusted King Burger

Ingredients

1 1/2 pound ground chuck
3 tablespoons dry bread crumbs
1 egg
3 green onions, chopped
1 tablespoon Cajun seasoning
1 tablespoon prepared mustard
2 to 3 medium oranges
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon pepper
1 jar (7 ounces) of roasted red peppers,diced
1/3 cup coarsely chopped Kalamata olives
1/3 cup diced red onion
1/4 cup barbeque sauce
4 slices of monterary jack cheese
4 hamburger buns

 

Instructions

Preheat grill for high heat. In a medium bowl, mix the ground chuck, bread crumbs, egg, green onions, 1 tablespoon Cajun seasoning, mustard. Form into 4 patties. In a small bowl, blend the barbeque sauce and 1 teaspoon Cajun seasoning. Grate 2 teaspoons orange peel from oranges; reserve oranges. Combine orange peel, cumin and salt in small bowl; remove and reserve 2 teaspoons seasoning seasoning for relish. Add pepper to remaining seasoning; press evenly onto the patties. Lightly oil the grill grate, and cook the patties 5 minutes per side. During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly. Place the patties on buns and a slice of monterary jack cheese on each burger, and allow to melt. Meanwhile peel and dice enough reserved oranges to measure 1-1/2 cups. Combine diced oranges, red peppers, olives, onion and reserved 2 teaspoons seasoning in medium bowl; mix well. Serve patties with the relish and garnish on top with orange slices and olives on top of patties.
