Spicy Smokehouse Bacon Cheese Burger

Ingredients

Spicy Pepper Dressing
1 cup salad dressing
¼ teaspoon ground white pepper
¼ teaspoon ground cayenne pepper
¼ teaspoon ground chipotle pepper
2 tablespoons pickled jalapeno pepper finely diced
2 tablespoons canned green chili pepper finely diced
Patties
2 pounds ground chuck
2 teaspoons hickory smoked salt
¾ teaspoon mesquite flavored liquid smoke
¼ teaspoon onion powder
¼ teaspoon garlic powder
Vegetable oil, for brushing the grill rack
18 strips precooked bacon
12 slices texas toast
6 slices smoked provolone cheese
6 slices tomato
6 romaine lettuce leaves trimmed

 

Instructions

Directions Preheat a gas grill to medium-high, or prepare a medium-hot fire in a charcoal grill with a cover. To make the spicy pepper dressing, combine the salad dressing, white pepper, cayenne pepper, chipotle pepper, jalapeno pepper and green chile pepper in a bowl. Mix well and refrigerate until serving. To make the patties, combine the beef, hickory smoked salt, mesquite flavored liquid smoke, onion powder and garlic powder in a bowl, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the texas toast. Brush the grill rack with oil. Place the patties on the rack, cover, and grill until browned on the bottom, 3 to 4 minutes. Turn the patties and continue grilling until done to desired preference, about 5 minutes additional for medium. During the last few minutes of grilling place 3 strips of the precooked bacon on top of each burger to heat. Place the slices of texas toast on the outer edge of the rack and toast lightly on both sides. To assemble the burgers, place a generous amount of the spicy pepper dressing over what will be the 6 texas toast tops. On the 6 texas toast bottoms, place a patty with precooked bacon on it, 1 slice of smoked provolone cheese, 1 trimmed romaine lettuce leaf and 1 slice of tomato. Add the texas toast tops and serve. Makes 6 burgers
