Spicy Spanish burger with manchengo cheese, grilled tomatoes, and sauteed spinach

Ingredients

Grilled Tomato Marinade
1/2 cup olive oil
the juice of 2 lemons
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup fresh cilantro
3 ripe tomatoes
Sauteed Spinach
2 shallots
2 garlic cloves minced
3 Tablespoons olive oil
4 cups fresh spinach
Patties
1 pound ground chorizo
1 pound ground turkey
3 cloves minced garlic
2 fresh finely diced chilis
2 teaspoons ground cumin
2 teaspoons cayenne pepper
1 teaspoon salt
1 teaspoon pepper
2 tablespoons olive oil
8 ounce of manchego cheese
6 Portuguese Rolls
vegetable oil for greasing

 

Instructions

For the tomatoes in a bowl squeeze the lemons to obtain the juice and add the olive oil, salt, pepper, and the cilantro. Mix well. Slice the tomatoes on the thicker side and place in the marinade and toss. Set aside. For the spinach, heat the grill on high. Finely chop the shallots and mince the garlic. Place a fire safe skillet on the grill, add the olive oil, and let that heat for a minute. Add the shallots and minced garlic. Stir for for a minute. Add the fresh spinach and stir. Remove when all spinach is cooked through. Set aside. Lower the heat on the grill to medium. Place the tomatoes on the grill. Cook for 2 minutes on the first side, then flip and cook on the other side for 2 minutes. The tomatoes should be done, they should not be over cooked. Set aside. For the patties, in a bowl combine the ground chorizo and the ground turkey. Mince the garlic and add. Finely chop the chilis and add. Add the cumin, cayenne pepper, salt, pepper, and olive oil and mix. Heat grill on high and grease with vegetable oil. Place patties on hot grill and cook with the lid closed for 5 minutes. Flip patties and close lid for another 5 minutes. Use a meat thermometer to determine when patties are done. It should read 165 degrees. Slice the manchego cheese and place on patties 2-3 minutes before removing from grill and close the lid. Slice open the portuguese rolls and place on grill for a minutes to warm. Remove patties and rolls for assembly. To assemble, place patty with cheese on the bottom half of the roll. Place 2 thick tomato slices on top the cheese. Add 2 spoonfuls of sauteed spinach and top with the other half of the roll. Makes 6 burgers
