Spicy Turkey Strawberry Burgers

Pairs well with:

Zinfandel

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients:

Salsa mayonnaise spread:

3 oz low fat cream cheese
¼ cup mild salsa
½ cup mayonnaise
¼ cup finely chopped cilantro leaves
2 tablespoon chopped Jalapeno pepper

Strawberry watercress salad:

1 tablespoon Hunan Smokehut spicy grill sauce
1 tablespoon sweet chipotle sauce
1 tablespoon vegetable or olive oil
2 tablespoon lemon juice
1 teaspoon grated ginger
1 teaspoon garlic
2 teaspoon Dijon mustard
2/3 cup thinly sliced strawberries
4 cups watercress chopped
½ cup toasted sliced almond

Patties:

1½ pounds ground turkey
¼ cup Hunan Smokehut spicy grill sauce
¼ cup sweet chipotle sauce
2 tablespoon grated or paste garlic
2 tablespoon grated or paste ginger
3 tablespoon lemon juice
1 tablespoon vegetable oil
½ cup finely chopped strawberry
½ cup finely chopped sweet onions
1/3 cup finely chopped cilantro
1/3 cup Italian style bread crumb

2 tablespoon vegetable oil (to brush the grill)
6 good-quality whole wheat hamburger buns, split

Instructions:

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high (280-degree F).
To make the salsa spread, combine cream cheese and salsa well in a medium glass bowl. Add mayonnaise, Jalapeno pepper and cilantro. Mix well. Cover and refrigerate until serving.

To make Strawberry watercress Salad, mix Hunan Smokehut spicy grill sauce, sweet chipotle sauce, oil, lemon juice, ginger, garlic and mustard in a large bowl. Add strawberry slices, mix well. Add watercress, toss gently to coat the dressing. Add the almond slices just before assemble the burgers. Cover the salad and set aside.

To make the patties, combine the ground turkey, spicy grill sauce, sweet chipotle sauce, lemon juice, oil, garlic, ginger, chopped strawberries, onions, cilantro and bread crumb. Mix well. Shape the mix into 6 patties to fit the buns. Loosely cover with plastic wrap and set aside.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once or twice until done to preference and brushing frequently with the glaze. Cook about 7 to 9 minutes on each side for medium doneness. Place the buns, cut side down, on the outer edges of the grill rack to toast lightly during the last 2 minutes of grilling.

To assemble the burgers, spread a generous amount of the Salsa mayonnaise spread over the cut sides of the buns. On each bun bottom, place a grilled patty, followed by equal portions of the strawberry watercress salad (do not forget to mix almond slices in the salad), add the top bun and serve.
