Spring Celebration Burger

Pairs well with:

Ingredients

Patties

2 Pounds Ground sirloin
2 TBS minced garlic
1 TBS Fine Ground Sea Salt
1/2 TBS Fresh Cracked Black Pepper
1 TSP Cumin
1 TSP Chili Powder
1 TSP Smoked Paprika
1/4 C Minced Onion (sauteed)
1/4 C Minced Red Bell Pepper (sauteed)
1/4 C Minced Celery (sauteed)
1/4 C Portabella Mushroom Caps Minced (sauteed)
2 TBS Salted Butter
1 Egg, slightly beaten

Spring Salad Topping

1 C Arugela
1 C Baby Spinach
1 C Alfalfa Sprouts
1/2 C Mint Leaves
1/4 C Cilantro
1/4 C Flat Leaf Parsley

Dressing

1/4 C Good Balsamic vinegar
3/4 C Good Extra Virgin Olive Oil
1 TSP Minced Garlic
1 TSP Sea Salt
1 TSP Fresh Cracked Black Pepper
1/2 TSP Dijon Mustard

Other Toppings

12 Slices Smoked Cheddar Cheese
12 Slices Apple Smoked Bacon Cooked Crispy
2 Avocados, sliced thin.
Juice of 1 Large Lemon, to drizzle over the avocado, the rest should be added to the dressing portion.
2 Peaches, sliced thin.

Instructions

In a sautee pan, add the 2 TBS butter, let melt. gently cook the minced vegetables until translucent, set aside and allow to cool. In a bowl, combine all other ingredients,for the patties, mix until throughly combined. When saturated vegetables are cool, add to the meat mixture. Divide evenly into 6 patties. Cover with plastic wrap and refrigerate.

Prepare grill. While coals are heating, begin to work on the other components to the burger.

Mix all ingredients for the dressing and set aside.

Roughly chop the Spring salad mix. Set aside. Slice the avocado and peaches. Drizzle both with the lemon juice. This will prevent browning. Add remaining juice to the dressing and whisk.

Cook bacon, you will want it to be very crispy. Drain and set aside.

The coals should be ready at this point. Brush the grill with the vegetable oil. Place patties on grill. For Medium-Well, this should be approximately 5-6 minutes per side. Of course this depends on the coals and thickness of your patties.

During the last few minutes of cooking, you will want to grill your peach slices. Just long enough to get grill marks on the fruit. Also during this time you will want to lightly grill your buns.

When your patties have reached desired temperature,add 2 slices of the smoked cheddar cheese, pull from the grill and let rest for a few minutes to allow the juices to redistribute.

Mix the spring salad mix with enough dressing to lightly coat the leaves.

To assemble, place bottom of bun on your plate, place patty then cross 2 strips of bacon, a small portion of the spring salad, top with 3-4 peach and avocado slices. Drizzle with a little more dressing. Place the top of the bun on the top, and enjoy!
