STB (simply the best) Burgers

2 eggs
2 lbs. freshly ground chuck (20% fat)
1/2 cup finely diced onion
2 Tbl. Worcestershire sauce
1 1/2 teas. salt
1/2 teas. garlic salt
1 1/2 teas. seasoned pepper
green chilis – use your imagination!!!



Beat eggs slightly, add ground chuck and onions – sprinkle with seasonings. Mix lightly with a big wooden spoon or with damp hands. Make two fairly thin patties per burger. Stuff with your preference of above stuffing ingredients. If you overstuff, melding the two patties together will be difficult. Seal the two patties along the edges. Set aside in refridgerator until ready to grill. Preheat grill on high for 10 minutes. Reduce heat to medium. Gently transfer burgers to grill. Cook with lid down 5 minutes. Turn burgers (only once!!!) and cook for additional 5 minutes. Cooking time will depend on how thick you make your burgers. Don't smash burgers with spatula. Enjoy!!
