Steakhouse Mushroom, Walnut, & Goat Cheese Burger

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.


Sautéed Mushrooms:
1 tablespoon butter
1 tablespoon olive oil
2 cloves garlic, finely minced
2 cups baby bella mushrooms, cleaned and diced
1 tablespoon fresh sage, minced
3 tablespoons fresh parsley, minced
1 teaspoon salt
1/3 cup Sutter Home’s Cabernet Sauvignon
1 tablespoon balsamic vinegar
½ cup walnuts, chopped
Caramelized Onions:
2 tablespoons olive oil
1 large yellow onion, thinly sliced
1 ½ pounds ground chuck beef
1 ½ teaspoons salt
1 egg
1/3 cup Sutter Home’s Cabernet Sauvignon
1 four oz log goat cheese, cut into 6 even slices (substitute 6 tablespoons mascarpone cheese if you do not like goat cheese)
2 tablespoons vegetable oil for the grill rack
¼ cup butter
¼ cup olive oil
2 cloves garlic, finely minced
6 onion buns, split in half
1 cup fresh, whole basil leaves



Heat gas grill to medium high. Prepare mushroom mixture by heating 1 tablespoon butter and 1 tablespoon olive oil in a small sauté pan on the grill. When hot add 2 cloves garlic and mushroom; sauté until cooked through, about 4 minutes. Add sage, parsley, 1 teaspoon salt, and 1/3 cup Sutter Home’s Cabernet Sauvignon. Sauté until wine evaporates. Remove from heat and mix in balsamic vinegar and walnuts. Set aside to cool. Prepare caramelized onions by heating olive in a sauté pan until smoking hot. Add onions and sauté until caramelize, approximately 7 minutes. Set aside to cool. Prepare patties by mixing ground chuck beef, 1 ½ teaspoons salt, egg, 1/3 cup Sutter Home’s Cabernet Sauvignon, and cooled mushroom mixture. Mix well, but be careful to not compact the meat mixture. Form 12 thin patties with the meat mixture. Place one slice of goat cheese on 6 of the patties, and top those 6 patties with the other 6 patties, creating a total of 6 goat cheese stuffed patties. Brush the heated grill rack with vegetable oil. Place the patties on the rack. Cook 3 –4 minutes on the first side. Flip patties and cook an additional 4 minutes on the second side. While the patties are grilling, heat ¼ cup butter, ¼ cup olive oil, and 2 cloves garlic until melted. Brush garlic butter mixture onto each bun half. Place buns, garlic butter side down, on grill to toast. Heat buns through completely. Remove the bottom buns from the grill. Place patties on the bottom buns. Top patties with caramelized onion, basil leaves, and the top bun. Enjoy!
