Super Happy Lucky Shiitake Burger

2.5 lbs ground chuck
6 dried shiitake mushrooms, ground to fine powder (coffee mill works best)
1 tsp sriracha sauce – Rooster Hot Sauce
1 tablespoon dark soy sauce
1 tablespoon rice wine vinegar – unseasoned
1.5 tablespoons Hoisin sauce
1 green onion, thinly sliced
1 teaspoon fresh ginger – grated
1 teaspoon toasted sesame oil
For Sesame Wasabi Aioli:
2/3 cup mayonnaise
1/4 teaspoon wasabi paste
1/2 teaspoon toasted sesame oil
1/2 teaspoon Hoisin sauce
6 leaves Boston lettuce
1 red onion – sliced
Serve on:
6 Onion Rolls, halved horizontally



Preheat gas grill on high for five minutes. Combine first nine ingredients and mix well by hand. Divide into 6 equal portions and form into bun-sized patties. Place patties on preheated grill and cook 4 to 8 minutes per side or until medium-well done.

Combine Aioli ingredients and stir until well mixed. Spread mayonnaise mixture evenly on upper and lower halves of the onion rolls. Place burgers on bottom half of roll. Top with onion slices, lettuce, and upper half of roll.
Serve hot and juicy!
