Surf ‘n Turf Burger with an Asian Coleslaw & Fiery Peanut Sauce

Ingredients

Asian Coleslaw:
2 teaspoons curry powder
3 teaspoons teriyaki sauce
1/2 teaspoon sesame oil
3 teaspoons orange juice
3 cups shredded red cabbage
2 cups shredded carrots
2 tablespoons chopped cilantro
Fiery Peanut Sauce:
1/2 cup smooth peanut butter
1 tablespoon teriyaki sauce
1 garlic clove, minced
1/2 teaspoon red pepper flake
1/4 cup orange juic
e Surf 'n Turf Patties:
6 tablespoons carrots;peeled and grated
3 tablespoons chopped cilantro
1 teaspoon curry powder
1/2 teaspoon red pepper flake
1 tablespoon teriyaki sauce
1 1/2 teaspoons kosher salt
2 garlic cloves, minced
1/2 cup breadcrumbs
1 1/2 pounds ground chuck
3/4 pound uncooked shrimp;peeled & diced
1 egg
vegetable oil, for brushing the grill rack
6 Kaiser rolls, split

 

Instructions

Preheat a gas grill to medium-high. To make the Asian coleslaw, combine the curry powder, teriyaki sauce, sesame oil, and orange juice in a bowl. Mix well to combine. Add the red cabbage, carrots, and cilantro. Mix well and refrigerate until serving. To make the fiery peanut sauce, combine the peanut butter, teriyaki sauce, garlic, red pepper flake, and orange juice in a a bowl. Mix well to combine. Set off to the side until ready to serve. To make the surf 'n turf patties, combine the carrots, cilantro, curry powder, red pepper flake, teriyaki sauce, kosher salt, garlic, and breadcrumbs in a large bowl. Mix well to combine. Add the ground chuck, shrimp, and egg. Handling the meat as little as possible, mix well. Divide the mixture into 6 equal portions. Brush the grill rack with the vegetable oil. Place the patties on the rack, cover, and grill until browned on the bottoms, 3 to 4 minutes. Turn the patties and continue grilling until done to preference, about 3 to 4 minutes longer for medium. During the last few minutes of cooking carefully place the Kaiser rolls, cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, place a generous amount of the fiery peanut sauce over the cut sides of the rolls. On each roll bottom, place a patty and 1/2 cup of the coleslaw. Add the roll tops and serve. Makes 6 burgers
