Surf ‘N Turf Chipotle Burger

1-1/2 pounds ground beef (sirloin)
2 tablespoons canned Chipotle peppers finely chopped
1/2 teaspoon EACH salt & pepper
2 tablespoons chopped cilantro
6 medium shrimp, cooked, peeled and chilled
6 thin slices chorizo sausage cut to fit size of each shrimi
For serving:
6 English Muffins made with corn meal
6 slices red onion
1 cup chili sauce (purchased)



1. Mix first 4 ingredients together in a medium size bowl. Form into 6 equal size portions. 2. Take one cooked shrimp and one slice of chorizo sausage and place in the middle of each portion of seasoned beef. 3. Dampen hands with water and form beef mixture into a ball enclosing the shrimp and chorizo in the center. Flatten each burger slightly and repeat with remaining portions of beef and transfer to a holding plate. Refrigerate until ready to grill. 4. Heat a charcoal or gas grill to medium high and grill burgers to an internal temperaature of 165 degrees F. 5. Serve each burger on a grilled corn English Muffin with chili sauce and sliced red onion.
