Sutter Home Gewurztraminer-Obatzda Cheese Burgers

  • For Burgers:
  • 2 Tablespoons butter, room temperature
  • 1/2 Tablespoon radish, finely grated
  • 1 teaspoon fresh garlic, finely grated
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon white pepper
  • 1.5 Pounds ground chuck
  • 1/2 pound chorizo, finely chopped
  • For Sutter Home Gewurztraminer-Obatzda Cheese Spread:
  • 8 ounces Camembert cheese, rind removed and chopped
  • 1 Tablespoon butter, room temperature
  • 4 ounces cream cheese, room temperature
  • 1Tablespoon green onion, white part, finely chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon caraway seed, crushed
  • 1 to 2 Tablespoons Sutter Home Gewurztraminer wine
  • 1/8 teaspoon Kosher salt
  • 1/2 teaspoon cracked black pepper
  • To Serve:
  • 6 Pretzel rolls, halved
  • 6 1/4 inch thick sliced tomatoes
  • 3 large Romaine lettuce leaves, halved

Instructions

  • Preparation:
  • In a small sauce pan over medium heat add 1 Tablespoonsbutter.
  • As soon as butter melts, add grated radish, garlic, Kosher salt and white pepper. Reduce heat to medium low. Saute all 3 minutes with wooden spoon. Remove from heat.
  • To make Sutter Home Gewurztraminer-Obatzda Cheese Spread, mash the Camembert cheese into small chunks in a medium bowl with masher or wooden spoon. Mix softened butter and cream cheese into the Camembert cheese chunks. Add finely chopped onion, paprika and crushed caraway seeds into cheese mixture. Slowly add Sutter Home Gewurztraminer into mixture, one tablespoon at a time. Season with Kosher salt and black pepper, mixing all well.
  • Consistency should be thick but not a runny. Cover with plastic wrap and refrigerate.
  • In a large mixing bowl, gently fold together ground chuck and chopped chorizo.
  • Add radishes, garlic and butter.
  • Do not over-mix. Divide blended meat mixture into 6 portions. Form each portion into a 3/4 inch thick patty, slightly larger than the diameter of the pretzel roll bottom.
  • Place patties on a preheated medium-high grill, 3 minutes on each side for medium rare and 4 minutes for medium to medium well. Once patties are turned, place halved Pretzel rolls, cut side down on indirect grill side until lightly toasted. Remove toasted roll halves. Remove cooked patties from grill and keep warm.
  • Remove Sutter Home Gewurztraminer-Obatzda Cheese Spread from the refrigerator and divide into 6 portions.
  • To assemble burgers, place one grilled patty on bottom of Pretzel roll.
  • Top with a tomato slice and a crispy Romaine lettuce half.
  • Spread each top half of Pretzel roll with a portion of Obatzda Cheese-Gewurztraminer Spread.
  • Close burgers and plate.
  • Makes 6 Sutter Home Gewurztraminer-Obatzda Cheese Burgers.
  • Serve each with a glass of Sutter Home Gewurztraminer to add to a well-crafted array of flavors!
